Dessert Hushpuppies – Using Blueberries

Fresh blueberries and confectioner’s sugar make our original hushpuppies into a great dessert or breakfast treat.

Ingredients

Original Recipe

  • 2 cups Original Hushpuppy Mix
  • 2 tsp sugar
  • 1 cup water
  • 1 1/2 tsp vanilla
  • 1 cup chopped blueberries
  • vegetable oil for frying
  • confectioner's sugar for dusting
  • 1 cup confectioner's sugar
  • 1 tbsp lemon juice
  • 1/2 tbsp vanilla
  • 1 1/2 tbsp water

Hushpuppy

  • 5 lbs. Original Hushpuppy Mix
  • 13 1/3 tsp sugar (4 tbsp + 1 ¾ tsp sugar)
  • 6 2/3 cup water (6 ¾ cup + 2tbsp)
  • 10 1/8 tsp vanilla (3 tbsp + 1 ¼ tsp vanilla)
  • 6 2/3 cup chopped blueberries (6 ¾ cup + 2tbsp)
  • vegetable oil for frying

Icing

  • 6 2/3 cup confectioner's sugar
  • 6 2/3 tbsp lemon juice
  • 3 1/3 tbsp vanilla
  • 10 1/8 tbsp water
  • Confectioner's sugar for dusting

      Directions

        • Step One

          Combine House-Autry Plain Hushpuppy Mix and sugar in a large mixing bowl.
        • Step Two

          Add water and vanilla, mixing well.
        • Step Three

          Gently fold in blueberries, and then let batter rest for 5 minutes.
        • Step Four

          In a heavy, deep frying pan or deep fryer, heat oil over medium-high heat to 375°F
        • Step Five

          Drop batter by teaspoonfuls into the hot oil and fry for 3 minutes or until golden brown.
        • Step Six

          Remove puppies from oil to a wire rack or paper towel-lined platter.
        • Step Seven

          Sprinkle with confectioner's sugar before serving.

      Optional Glaze

      • Step One

        Combine confectioner's sugar, lemon juice and vanilla in a medium bowl.
      • Test with thermometer or by sprinkling a little breading mix in oil - if it bubbles up golden brown, oil is ready.
      • Step Two

        Add enough water to create a loose glaze.
      • Step Three

        Serve alongside puppies.
